The cake trend for 2020 was an island cake, my mother enjoys cake decorating and thought she would enjoy the surprise of this unique cake. It was quite the task to complete as the cake had to be baked, cooled and cut into an island shape, whatever that is, thankfully the cake is quite forgiving when you cover it with fondant decorations and submerge it into gelatin. The fondant was painted (edible) to stand out against the blue green that is the water. The cake had to be wrapped in saranwrap and then surrounded by acetate just to pour the gelatin mixture and hope that it would set up nicely to remove it and have a free-standing cake. Thankfully it was a success, and my mother’s elation at my effort was well worth the days of work.
The island cake is really an amazing cake. To submerge the cake itself in gelatin or make an ocean cake with Jello is amazing. You can see all of the under water decorations through the side of the gelatin and through the top. The cake is chocolate and all decorations are hand painted with edible food coloring.
This is not really an island cake tutorial or an ocean cake tutorial but here are the basic steps we took.
This is basically how to make floating island cake, it takes time as you have to do in in a few steps. You have to make and set the island cake itself, from there you will make and decorate the cake below the water line. Pour in a small amount of gelatin and allow that to set. After that you should protect the top of the island and pour in the rest of the gelatin. Again you will need to let the gelatin set to form the water. Now you will need to protect the water while you decorate the top of the island. After this it is ready to serve and be eaten.
